Cucumber Chłodnik – cold cucumber soup
Preparation time: 30 minutes Serves:
2-3
Ingredients:
1 kg fresh cucumbers
500ml vegetable stock
2 tbsp butter or margarine
1/3 glass sour cream
salt
sugar
black pepper
lemon juice from ½ lemon
1 tbsp parsley
1 tbsp dill
1 tbsp thyme Method:
Peel and sliced cucumbers stew on butter for couple minutes.
Season them with salt and pepper. Boil vegetable stock, blend cucumbers.
Add cream and get cold. Season with sugar, lemon juice and herbs.
Serve cold.
