Italian cuisine is a triumph of flour based dishes. “La
Pasta” is the name of the national Italian dish, prepared
by them with true finesse. But the pasta is not the end of the story
as it always goes with a delicious sauce.

- Each region in Italy has its own remarkable, culinary pearls.
- Piedmont is famous for truffles, venison and cheeses. The regional
speciality is fenduta – counterpart of French fondue. The
most popular pasta in this region is ravioli.
- Unusual in Italy the popularity of butter in Lombardian cuisine
gives on original flavour to their regional dishes. The local
delicacy is called risotto alla Milanese and osso buco –
leg of veal with risotto. Other local specialities are: minestrone
– the popular vegetable soup and busecca – veal tripe
with beans.
- The cuisine of the south – west located Liguria, with
its capital city in Genoa, is mostly based on fish.
- Fish and frutti di mare are also popular in Venice, where the
most popular dish is called polenta.
- Emilia – the Romana province is famous from dishes based
on tomatoes. All kinds of pastas are the leading dishes in Bolognia,
most of them served with sauces and broths.
- Toscanini cuisine is based on olive oil, the best in Italy.
- Umbria is famous from truffles, spaghetti and whole baked pig.
In Roma, apart from spaghetti, which is popular all year around, the
local specialities change depending on the season. The most popular
dishes are: fettucine all’uovo (pasta with egg), tripe alla
Romana and saltimbocca – slices of beef and ham fried with thyme.
